Pear and turkey salad with aged gouda and walnuts

Getting rid of those Thanksgiving leftovers but want to keep it light? This salad is just the thing! Packed with fresh, fibre-filled ingredients and protein, it’s sure to fill you up and keep you full longer.

Ingredients

  • 1 tablespoon (15 mL) whole-grain mustard
  • 1 tablespoon (15 mL) apple cider vinegar
  • 1/4 cup (60 mL) extra-virgin olive oil
  • ¼ tsp (1 mL) each salt and freshly ground black pepper
  • 4 cups (1L) mixed greens
  • 2 pears, thinly sliced (about 2 cups)
  • 2 cups (500 mL) shredded or cubed roast turkey breast pieces
  • ½ cup (125 mL) aged gouda cheese, diced or grated
  • ¼ cup (60 mL) coarsely chopped walnuts
  • ¼ cup (60 mL) dried cranberries

Instructions

  1. In a large bowl, whisk the mustard, vinegar, oil and seasoning until combined.  Add the greens, pears, turkey, and gouda to the bowl and toss with the vinaigrette to lightly coat.
  2. Divide the salad among 4 plates, and top with the walnuts and dried cranberries
