Pear and walnut flatbread with gorgonzola, arugula, and balsamic glaze

This flatbread is so easy – made extra delicious with pears, caramelized onions, Gorgonzola, and finished with balsamic glaze. Serve as a main with a side salad or cut into smaller pieces to offer as an appetizer. Recipe by Fit Mitten Kitchen.

Ingredients

  • 340 g naan flatbread or prepared pizza dough
  • 1 small red onion, sliced
  • 1 medium pear, thinly sliced
  • 1/4 cup (60 mL) crumbled gorgonzola
  • 1/4 cup (60 mL) chopped walnuts
  • 1 cup (250 mL) arugula
  • 2 Tbsp (30 mL) balsamic glaze

Instructions

  1. Preheat oven to 400ºF. Line baking sheet with parchment paper.
  2. Heat oil in medium skillet over medium heat; add onions, stirring frequently until translucent and fragrant. Add sliced pear and continue to cook just to soften slightly, about 2 minutes.
  3. Place onions and pear slices on flatbread, add crumbled gorgonzola and chopped walnuts. Bake for 10 minutes. Top with arugula and finish with balsamic glaze.
