Apple honey spice muffins
The honey and apple keep these muffins moist, and the warm spices mimic the taste of apple pie.

Ingredients
- 3/4 cup (175 mL) all-purpose flour
- 3/4 cup (175 mL) whole wheat flour
- 1 tsp (5 mL) baking powder
- 1/4 tsp (1 mL) baking soda
- 1 tsp (5 mL) ground cinnamon
- 1/2 tsp (2.5 mL) ground ginger
- 1/8 tsp (0.5 mL) ground cloves
- 1/2 tsp (2.5 mL) salt
- 1 egg
- 1/4 cup (60 mL) canola oil
- 1/4 cup (60 mL) honey
- 1 ½ cups (375 mL) packed, shredded apple (about 2 small apples)
Instructions
- Preheat oven to 375°F.
- Mix flours, baking powder, baking soda, spices and salt.
- Whisk together egg, oil and honey until blended; stir in grated apple.
- Add wet ingredients to dry ingredients and mix until just combined.
- Add 12 paper liners to a muffin tin. Use a ¼ cup measure to scoop batter into lined muffin cups. Bake for 18-20 minutes. Let cool on wire rack before serving. Makes 12 muffins.
Tips:
- Cooking know-how: Choose tart, flavourful apples for this recipe. Honeycrisp, Mutsu or Granny Smith work well.
- Nutrition know-how: Leaving the skin on the apple and grating it into the recipe adds extra fibre.
