Teriyaki chicken stir-fry for two

This master chicken stir-fry recipe can be used as a template to create many different stir-fry dishes. This version includes chicken and crisp carrots, broccoli and red pepper, but you can change it up with any proteins and vegetables you have on hand.

Ingredients

  • ½ cup (125 mL) long-grain brown rice
  • ½ lb./227 g boneless, skinless chicken breasts, about one large, cut into 1-inch pieces
  • 2 Tbsp (30 mL) sesame oil, divided 
  • 4 tsp (20 mL) cornstarch, divided 
  • ½ cup (125 mL) reduced-sodium chicken broth
  • 1 Tbsp (15 mL) reduced-sodium soy sauce
  • 1 Tbsp (15 mL) rice vinegar or mirin
  • 1 Tbsp (15 mL) brown sugar
  • ½ cup (125 mL) thinly sliced onion
  • 2 Tbsp (30 mL) fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 cup (250 mL) thinly sliced carrots 
  • 1 ½ cups (375 mL) broccoli florets  
  • 1 red pepper, chopped into ½ - inch pieces
  • 1 Tbsp (15 mL) sesame seeds
  • Sriracha sauce (optional)

Instructions

  1. Prepare rice according to package directions; typically for brown rice, that is about 40-45 minutes.

  2. Mix chicken, 1 Tbsp (15 mL) sesame oil and 2 tsp (10 mL) cornstarch in a medium bowl. Set aside for 15 minutes while you prepare other ingredients.

  3. Meanwhile, whisk remaining 2 tsp (10 mL) cornstarch with broth, soy sauce, rice vinegar and brown sugar until combined. Set aside.

  4. Heat remaining 1 Tbsp (15 mL) sesame oil in a wok or large frying pan over medium-high heat. Add chicken pieces and stir fry for about 6 to 8 minutes until chicken is cooked through (about 3 to 4 minutes per side). 

  5. Add onion, ginger and garlic. Cook for about 1 minute until fragrant. 

  6. Add broccoli and carrots and continue to cook for 3 minutes before adding red pepper strips. Cook for another 2 minutes.

  7. Add sauce mixture and let it come to a gentle simmer. Cook for about 1 minute, stirring occasionally, until thickens. Sprinkle with sesame seeds before serving with rice. 

Tips

  • Substitution: The chicken can be replaced with beef, pork or tofu to change up the protein.
