Snack

Everyone loves Mexican layered dip with beans, salsa, avocado, sour cream and cheese. It’s a classic. This individually portioned appetizer is perfect for parties, BBQs or potlucks.

Ingredients

  • 1 can (398 mL) refried beans
  • 1 Tbsp (15 mL) taco seasoning
  • ½ cup (125 mL) chunky salsa
  • 1 ripe avocado (about ½ cup)
  • Juice of one lime, divided
  • ¼ cup (60 mL) cilantro, divided
  • ½ cup (125 mL) low-fat sour cream
  • ½ cup (125 mL) shredded Mexican cheese blend or cheddar cheese
  • 2 Roma tomatoes, seeded and diced
  • 1 jalapeno, seeded and finely chopped (optional)
  • 2 Tbsp (30 mL) finely chopped red onion
  • 8 black olives, sliced
  • 1 green onion, sliced
  • 8 x 8 oz./125 mL glasses, small bowls or jars
  • 40 large restaurant-style tortilla chips

Instructions

  1. Mix refried beans and taco seasoning in a small bowl. Add 3 Tbsp (45 mL) to the bottom of each of serving dish. Top with 1 Tbsp (15 mL) chunky prepared salsa.

  2. Mix avocado, juice of half the lime and 2 Tbsp (30 mL) cilantro in a small bowl (can be chunky or smooth whichever is preferred). Add 1 Tbsp (15 mL) avocado mixture to serving dishes, spreading gently over the salsa layer.

  3. Top each dish with 1 Tbsp (15 mL) sour cream and 1 Tbsp (15 mL) shredded cheese.

  4. Mix tomato, jalapeno, red onion, juice of the other half of lime and remaining 2 Tbsp (30 mL) cilantro in a small bowl. Add 1 Tbsp (15 mL) to each dish. Top with sliced olives and green onion. 

  5. Refrigerate for at least one hour or overnight before serving with tortilla chips.

Tips

  • Substitution: If you don’t have taco seasoning handy or it isn’t something you use, you can replace it with 1 tsp (5 mL) chili powder, 1 tsp (5 mL) cumin, ½ tsp (2.5 mL) each garlic and onion powder. 
  • Big batch: For a more casual gathering, you might want to make the dip in a large round dish or pie plate. Follow instructions and ingredient layering as listed but skip the individual cups.
  • Make-ahead: You can make the mini dips the day before your gathering. Cover and refrigerate overnight to save yourself some time on the day of your party.
