This tart and tangy mango lime mousse is the light, refreshing dessert you’ve been waiting for. With a creamy texture, fruit-filled flavour and hit of toasted coconut, it will pick up your mood any time of year.

Ingredients

  • Zest and juice of two limes, divided (you will need 3 Tbsp (45 mL) lime juice total)
  • 1 ½ cups (375 mL) chopped fresh mango, peeled, cored (about 3-4, depending on size) 
  • ¼ cup (60 mL) low-fat sweetened, condensed milk
  • ½ cup (125 mL) 0% plain Greek yogurt
  • ¼ cup (60 mL) whipping cream
  • 2 Tbsp (30 mL) unsweetened shredded coconut

Instructions

  1. Zest limes, reserving and setting aside about 1 tsp (5 mL). Add remaining zest and juice from limes to blender or food processor. Add chopped mango, condensed milk and yogurt. Blend until smooth.

  2. Beat whipping cream in large bowl until stiff peaks form. Slowly and gently add the mango mixture, folding with a spatula just to combine. Divide about ½ cup (125 mL) each into 4 small glasses, jars or bowls.

  3. Toast coconut in small frying pan over medium-high heat for about 1 minute or until slightly browned, stirring frequently.

  4. Top mango lime mousse with a little lime zest and some toasted coconut. Refrigerate for at least one hour or overnight.

Tips

  • Cooking know-how: This recipe works best when divided into individual serving dishes to firm up overnight. You can make one big batch and spoon it out like a pudding, but the texture is slightly softer.
  • Make it easy: Use a ½ cup (125 mL) measuring cup to easily portion the mousse into serving containers.
  • Substitution: Frozen, thawed mango can be used in place of fresh mango; however,  cut the thawed cubes into smaller pieces before measuring to ensure you get the full 2 ½  cups (625 mL) worth of fruit. We do not suggest using canned mango, as it is too soft.
