Dessert
Here’s a dessert you can feel good about. These cakey, flourless brownies get a little protein and fibre from their main ingredient - black beans! Don’t be fooled; this recipe whips up fast and has all the delicious chocolate flavour you expect!
Ingredients
- 1 can (19 oz./540 mL) black beans, drained and rinsed
- ¼ cup (60 mL) canola oil
- 3 eggs
- ½ cup (125 mL) semisweet chocolate chips, divided
- 1 tsp (5 mL) vanilla
- ⅓ cup (80 mL) cocoa powder
- ¾ cup (175 mL) brown sugar
- 2 Tbsp (30 mL) cornstarch
- 1 tsp (5 mL) baking powder
Instructions
- Preheat oven to 350°F (175°C). Line an 8”x8” baking dish with parchment, letting hang over edges for easy removal.
- Add beans, oil, eggs, ⅓ cup (80 mL) chocolate chips and vanilla to blender or food processor. Blend until smooth.
- Mix cocoa powder, brown sugar, cornstarch and baking powder in a small bowl. Add half to blender and blend until smooth. Repeat with remaining half of dry ingredients, blending until smooth.
- Pour mixture into prepared baking dish. Sprinkle remaining chocolate chips on top. Bake in preheated oven for 30 to 35 minutes or until a toothpick comes out clean.
- Cool completely before removing from dish and cutting into 12 pieces.

Tips
- To serve: Top each piece with a few fresh raspberries for a special touch.
- Add-in: If you like nuts in your brownies, stir in ¼ cup (60 mL) chopped walnuts before pouring batter into the prepared baking dish.
- Cooking know-how: This recipe freezes very well. Slice into squares and layer between parchment paper in an air-tight freezer container. Stores for up to 3 months.
