November is for Roasted Vegetable Minestrone

Roasted veggies and prosciutto are just part of the charm of this earthy, rich Italian vegetable soup. Even vegetarians can enjoy this dish – just say ciao to the prosciutto. And what’s more, “This hearty soup combines vegetables and beans. Beans, peas, chickpeas and lentils are also called dietary pulses. Rich in protein and fibre, pulses can help improve blood sugar control and cholesterol levels,” says registered dietitian, Molly Ryder of Grafton, N.B.
